The original recipe came from a new cookbook that I bought on vacation, which I love!! I used a dressing we already had and added chicken. I had to omit the almonds since my kids have a nut allergy.
My husband wasn't sure if he was going to like it and asked me to fix it again after we had it for lunch today. Very fresh and delicious!
- Grill chicken (i cooked mine in a skilled with a little olive oil and sprinkled with salt and pepper).
- Place spring mix in bowl, add strawberries, chicken and cheese. Drizzle with dressing.
