How to Dry Carrots

Carrots are another super easy vegetable to dehydrate. Tip for getting more veggies in your family is once you have things like carrots dried you can put them in the food processor and make a powder then you can add that powder to other dishes without anyone knowing. If you use a dehydrator the temperature should be low enough that the enzymes in the food should stay in tacked so they are still full of nutrients.

Slice clean carrots about a quarter inch thick. You don’t have to peel but they look “prettier” if you do.

Blanch in boiling water for about 3 minutes then place the carrots in ice water to stop the cooking. Once they are cool, remove from the ice water and place on your drying trays. You will want to leave them on the dehydrator until they are nice and crispy.
