Cilantro Lime Chicken…great over rice, for nachos, or tacos…also a great freezer meal

This is great fresh or frozen and warmed up later. This is one of my favorite freezer meals. You can serve over rice, in tacos, or on nachos (as pictured). I normally get 2 rotisserie chickens from Costco or Sam's and double this recipe to make 4 meals.
Ingredients
- chicken (cooked & shredded) - 3-4 lbs.
- olive oil - 3 Tbs
- limes, juiced - 3
- cilantro - 2 cups, diced
- frozen corn - 1 large bag
- minced garlic cloves - 4
- finely chopped red onion - 1
- black beans, rinsed - 2 cans
- Cumin Powder - 2 tsp
- Jalopenos, diced - 2
- salt/pepper to taste
Instructions
Mix all ingredient in a large bowl. The split everything into two containers. you can warm in the oven, on the stove or in a slow cooker. I normal warm on the stove. Dress with sour cream, guacamole, and/or cheese etc.
