So as I shared Here I am new to using a food dehydrator but I am enjoying learning and seeing jars fill up on my pantry shelf. Peppers are so simple, there is no draining, blanching etc. Just slice the peppers, bell, jalapenos, banana whatever you have. Place them on the trays and keep it going until they are completely dry, they will become brittle when they ready.
The jar above, 3rd from the left, is 4 trays of banana peppers dried, which would have been a gallon or more if I had frozen them, so drying them is a real space saver. I have rehydrated the peppers and I would use them in casseroles but that might be about to the extent that I would enjoy them in a dish.

Banana peppers I have found work best if you cut in half and remove the seeds, Place the cut side up so any small pieces don’t fall through the trays.
When they are finish let them cool completely before placing in a air tight glass container.
