Sausage Hashbrown Breakfast Casserole

Ingredients
- Hot Sausage - 1 pound
- Onion - 1/4 cup chopped
- Frozen Diced Hashbrowns - 2 1/2 cups
- Eggs - 5 beaten
- Shredded Cheddar Cheese - 2 cups
- Milk - 1 3/4 cup
- All Purpose Baking Mix - 1 cup (i.e. Bisquick)
- Salt
- Pepper
Instructions
- Cook sausage and onion in a skillet. Add potatoes and cook about 5-7 minutes.
- Drain any grease. Pour in greased 13 x 9 pan.
- Mix eggs, cheese, milk and baking mix. Add some salt and pepper.
- Pour over sausage mixture in pan. Chill overnight.
- Cook about 45 minutes covered at 350 and then uncover for 10-15.
