On the Cooking for the weekend posts I keep referring to my cut veggies as a fast side dish. Here is an Idea of what I do with them. This is so fast and easy and having the veggies already cut up ahead of time really speeds up the process. The more types of veggies the better.
In a pan add your cut veggies add just enough water to barely cover the bottom of the pain, then add a drizzle of olive oil and a good amount of house seasoning (salt, pepper, and garlic). Put the pan over medium heat and COVER the pan. After 2 or 3 minutes remove the lid and stir if the veggies are starting to change colors leave the life off and let the water cook away. If they are not gotten brighter in color cover for another 1-2 minutes. Leave on heat and stirring until water has dissolved.
And you have a great PRETTY, FAST, and HEALTHY side dish, I really enjoy this over some buttered rice.
