Squash Relish
This recipe is from one of my oldest friends, well actually it is from an great uncle of hers, I believe but I have known her to make it for years. I am not relish fan but everyone LOVES this stuff and asks for it at every cookout at her house.
So Here is the recipe she uses. I really LOVE having all my recipes on the computer but I love seeing handwritten recipes, it just does my heart good, and all good recipes are stained and wrinkled.
- Prep Time : 15 minutes
- Cook Time : 45 minutes
Ingredients
- Shredded Yellow Squash - 8 cups
- Green Peppers - 3 finely chopped
- Hot Peppers - if desired
- Large Onions - 3 chopped finely
- Salt - 4 tablespoons
- Vinegar - 2 cups
- Sugar - 3 cups
- Celery Seed - 2 tablespoons
- Mustard Seed - 2 tablespoons
- Turmeric - 1 teaspoon
Instructions
Mix all ingredients in a large pot and bring to a boil then simmer for 30 minutes. Then pack sterilized canning jars with the hot relish. Then process in a WATER BATH for 15 minutes.
