Gluten Free Chicken Nuggets 2
I make a batch of nuggets to keep on hand for my son for fast meals. I just put them in a freezer bag and throw in the freezer and pull out a handful and put in the oven at 350 till warm through aboug 10-15 mins.
- Prep Time : 10 minutes
- Cook Time : 20 minutes
Ingredients
- Gluten Free Pancake/Baking Mix - 3/4 cup
- Grated Parmesan Cheese - 1/4 cup, grated
- Paprika - 1 teaspoon
- Salt or Garlic Salt - 2 teaspoon
- Boneless Skinless Chicken Breasts - 3, cut crosswise into 1/2-inch strips
- Eggs - 3, slightly beaten
Instructions
- Heat oven to 450°F. Line cookie sheet with foil; spray with cooking spray.
- Stir baking mix, cheese, paprika and salt in shallow baking dish. Dip chicken strips into eggs, then coat with baking mix mixture; repeat dipping in eggs and baking mix mixture. Place chicken on cookie sheet.
- Bake 12 to 14 minutes, turning after 6 minutes, until no longer pink in center.
