Fried Zucchini
I love the fried zucchini that my Mom makes and so does my brother. He even showed up at her house the other day with zucchinis he bought and asked her to make it so she planned a night to have all of us over for dinner so I snapped some pics when she made it.
Ingredients
- Jiffy Mix - (the little box would be more than enough)
- Eggs - (she used 2 eggs the other night)
- Milk - (she used about 1 cup or 1 1/2 cup)
- Medium Zucchini - 2 (sliced)
- Vegetable Oil
Instructions
- Pour the Jiffy Mix in one bowl and then in the other beat the egg with a fork and then add milk.
- Let the zucchini slices soak in the egg and milk mixture for a few minutes while your oil heats up.
- Dip each side of zucchini in Jiffy Mix and then place in hot oil. Let each side brown a little. Try not to keep flipping, the less you turn them the more batter that will stick.
- Remove from oil and place on plate to cool for a few minutes before serving.
