Meatless Summer Supper
I won't kid you NO ONE but me will eat this at my house but when I have leftovers or my husband is out of town this is a great and fast summer supper right out of the garden.
- Prep Time : 5 minutes
- Cook Time : 5 minutes
- Small Yellow Squash - 4, slice about 1/2 inch thick
- Onion - 1 diced
- Garlic - 2 cloves diced
- Butter - 3-4 tablespoons
- House Seasoning to taste
- Fresh Mozzarella Cheese - diced
- Blue Cheese - crumbled
- Tomatoes - diced
- Micro Greens
Saute onion, garlic, and butter until the onions are transparent, then add the squash, turning about about 3 minutes. I only cook the squash until it is just warm all the way though. Then top with the following fresh ingredients.
This was a GREAT meatless summer supper right from the garden.
