Pancakes (Eggless)
As most of you know my kids are both allergic to eggs. My daughter doesn't even eat eggs as an ingredient in food. We have a great egg replacer but it doesn't work well with pancakes, or at least the ones I have tried. While we were on vacation I came across a recipe but did not have all the ingredients so the what I ended up using is listed below. Original idea came from here.

Ingredients
- All Purpose Flour - 1 1/2 cup
- Sugar - 1/2 teaspoon
- Baking Powder - 3 tsp
- Milk - 1 1/2 cup
- Vegetable Oil - 1 1/2 TBS
- Water - 3 tsp
- Vanilla Extract - 1 1/2 tsp
- Butter (melted) - 4 TBS
Instructions
- Mix all ingredients except butter. Melt butter and mix in after everything else is combined. The batter may be a little bit lumpy.
- Melt some butter on skillet and pour 1/4 cup batter on warm skillet. Turn once you have a lot of little bubbles/holes on the side and cook until done.
