Roasted Garlic Hummus
We are really trying to get away from "white" dips at our house and we like hummus but it is hard to get a lot of flavor in the store bought stuff so I thought I would make my own. And like about everything else it is so much better homemade. I had cooked my own chickpeas but you can use canned. I really like cherry tomatoes and carrots dipped in hummus. This really took less than 5 minutes to make, not counting roasted the garlic, but I roast lots at once so that was not a big issue to me.
Ingredients
- Chickpeas - 1 can (or homemade)
- Roasted Garlic - 1 bulb
- Salt - 1 tsp
- Pepper - 1 tsp
- Olive Oil - 2 TBS
- Juice of Lemon - 1
- Olive Oil and Paprika to Top before Serving
Instructions
- Throw the first 6 items in a food processor or magic bullet and blend this very very smooth. Then I added a little drizzle of olive oil and some paprika on top before serving.
