Heat oil in skillet; add onion and saute until translucent. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then add in in egg, be sure to scoop the rice to the side and let the egg cook until about over easy/medium, then chop it with fork or spatula and stir back in the rice and combine until eggs are well done. Continue to stir making sure the rice does not burn or stick. Serve immediately
For an added twist add bean sprouts and or chopped green onions the last few minutes until hot.
