We hope you are able to gather some ideas from this “cooking for the weekend” series. I cook ahead on Friday for the weekend since I am a stay at home mom so I can take a little break on the weekend. But this process works the same if you did it on the Sunday for the upcoming week, or on Wednesday to finish you week out strong. I spend less than 2 hours in the kitchen and usually have at least 3 meals, prepared, along with snacks, and I usually try to have ideas for breakfast ready to go also.
For this week I started my Friday morning with NO IDEA what I was going to fix so there is not as much as last week.
We had recently been to Costco so I knew I had lots of salad greens, spinach, and carrots so I whipped up this Nut Topping For Salads so I could throw side salads or salads for meals together really fast over the weekend.
I also knew I had bought ricotta cheese to make lasagna and I had Spaghetti Sauce, hamburger and ground pork in the freezer so off I went to make a BIG batch of Lasagna for the weekend and some to freeze.
I filled up my son’s snack box in the fridge.
With drinkable applesauce, freeze dried fruit, and pineapple cups. Along with sliced strawberries, sunflower/pumpkin seeds, pepperoni, pizza sauce, shredded carrots, pistachios, and cheese sticks.
So while the nut topping cooked and I got the snack box ready the sauce cooked and things were ready to put the lasagnas together. The largest one I keep for the weekend, and the 3 smaller ones went to the freezer for easy meals another night.
And I had everything in the slow cooker for In a Pinch Chicken and potatoes for our Friday night dinner also with a salad.
