Cooking for the Weekend

Since I am a Stay at Home Wife and Mom, I cook and clean and clean and cook ALL week LONG. With that the weekends can just be another day. So I make sure all the laundry is done on Friday, house is picked up and I have most of my cooking done for the weekend. This gives me a “break” and something to look forward to on the weekends. I know that everyone can not do this, but if you work all week you might choose to take a couple hours on Sunday to cook for the week. I usually start cooking as soon as I get up on Friday morning and am done by 9:30 or so by lunch the kitchen and house is picked up.

So here is what I cooked a couple weeks ago on a Friday. I try to fix things we can kinda grab on the go since we tend to graze on Saturdays since we are usually outside most of the day.

Here I baked some Chicken with just some olive Olive Oil and Cajun Seasoning ( a couple pieces did not have the spice on it for my son). I do this about every weekend. I can put it on baked potatoes or on salads etc.

Most weekends I wash and cut lots of fresh veggies (this week’s was a little light since I was planning a Costco run over the weekend). This week for my broccoli, carrots, and cauliflower I made Ranch Dressing (yellow bowl), and Slow Cooker Cheese Dip  (in the glass dish) for dipping, we really like to dip around here. I also shredded  some cheddar cheese for salads etc. And the green dish is a pound of cooked bacon, we can use the bacon for salads, potatoes, breakfast, sandwiches etc.

I also made some Deviled Eggs.

Then I took some Browned Hamburger out of the freezer warmed up and added some Taco Seasoning and pulled out some Refried beans from the freezer so we could have nachos with the taco meat, beans, and the shredded cheese from above.

Chicken and Potato Hash - 1

While I was baking the chicken I baked a few potatoes and used the potatoes, some chicken, and a little bacon to make Chicken Potato Hash , For dinner Friday night and to have leftovers.

So this is what things look like for lunches and dinners for the weekend. I pull everything out and everyone can get what they like. Then the lids go back on and everything goes back to the fridge until the next meal.
