Mix 1/3 of a block of Achiote (found at Mex store in a little box) with 1 1/2 ounces of orange juice. This will make a thick paste.
Rub it on the chicken and let it marinate for at least an hour.
Grill or bake in the oven at 350 for 2 hrs or until done. Make sure to spray pan first with cooking spray. We eat this with beans-of course and salsa and tortillas.
