Lighter Chicken Salad
At my house we are always looking for ways to make our favorite dishes a little more healthful for our family. This is our newest version. I have had chicken salad with only Greek yogurt as the "dressing" but that step is a little much for all my family so we use yogurt and mayo.
Ingredients
- Chicken - 3 cups, diced
- Onion - 1/2, diced
- Celery Stalk - 1, diced
- Water Chestnuts - 1/2 can, diced
- Apple - 1, diced
- Walnuts - 1 cup, chopped
- Mayo - 1/2 cup
- Greek Yogurt - 1/2 plan (if you need more
- Honey - 1 1/2 TBS
- House Seasoning - (salt, pepper, and garlic) to taste
Instructions
- Once everything diced up to be about the same size just put everything in a bowl and mix well. Then return to the refrigerator for at least an hour.
- Chicken salad is good on sandwiches, with chips or crackers, on a bed of lettuce and this day I used these Chinese Soup Spoons. with a thin slice of apple on top. GREAT FOR A PARTY.
