This is another round of cooking for weekend, or you could cook on the weekend to eat on during the week. Since I stay home with my son, I cook extra on Fridays to have on hand for the weekend so I don’t have to cook and so we don’t eat out all the time.
Here is a picture of everything I made. The things that are not listed below are Layered Salads in Mason Jars, bacon (used in salads, and to have for breakfast) cut carrots with Ranch dip, and fruit and veggies juice for smoothies.
This week, I baked a some Chicken tenders with just olive oil and Fajita seasoning. We can eat this whole as chicken tenders or it can but cut up for salads like a Spring Mix with Chicken Salad or to add on top of Twice Baked Potatoes, that I have in the freezer.
I fell up my son’s snack bowl this week there is freeze dried fruit, cheese sticks, pear sauce, yogurt, yogurt smoothie drinks, nuts and seeds.
I shredded a bunch of cheese to have for salads, potatoes, cheese grits etc.
Shredded carrots for salads, and smoothies.
Hard boiled some eggs for salad and for a fast breakfast.
And easy snacks like triscuits, fresh mozzarella cheese and salami this can be a fast lunch too.
The Chicken above is also good with some tortilla chips and queso cheese dip. We LOVE to DIP and snack at our house so this is our “treat” for our weekend lunches.
2 fresh pineapples cut up for any meal of the day or snacks.
You see this is all super easy stuff and I spend less than 2 hours cooking but is makes the weekend go so much smoother and I get a little break from the kitchen.
