Cooking for the Weekend 4

This is another round of cooking for weekend, or  you could cook on the weekend to eat on during the week. Since I stay home with my son, I cook extra on Fridays to have on hand for the weekend so I don’t have to cook and so we don’t eat out all the time.

For this week’s Cooking for the weekend I Don’t have pictures of everything but I was heading out of town for a few days so I was mainly trying to work on food that I could leave for my hubby and take on the trip with my son and I.

Cooking for the Weekend 4-1

My Husband’s all time Favorite meal is Hamburger Hash so I made a big batch and divided it into 5 bowls. This can be breakfast, lunch, or super for him, and he really likes it warmed up, so it is a win win when I am heading out of town.  A lot of time I will fix a meatloaf etc if I am going to be gone a few days then have hamburger already browned and froze and a bag of frozen diced potatoes and he can make this meal himself easily.

Next I moved on to a Honey Glazed Ham which is a favorite of my son’s. Once it was cooked I divided it into 4 or 5 freezer bags. One to leave with my husband, one to take on our trip, and the other went to the freezer and I pull them back out for my son’s lunches from time to time. And I also keep the bone to freeze for Slow Cooker White Beans later on. As you can see we REALLY get our money’s wroth out of a ham. Each one of these bags can feed my family for at least 2 meals.

Jalapeno Pimento Cheese

Then I made a batch of Jalapeno Pimento Cheese for us to take on our trip which is just such a vacation food for me. I also cut a bunch of fresh fruits and veggies to leave at home and to take on the trip with us. Then last but not least I threw Roasted Chicken Thighs and Veggies in the oven for Friday night dinner along with a big fresh salad.
