There is just NOTHING BETTER than garden fresh tomatoes. I could eat several a day with just salt. But here are a few really great ways to use up all the summer goodness that is in garden tomatoes. I deal with loads of tomatoes in the summer making salsa (which is one recipe I don’t share, sorry) and canning tomato juice, whole tomatoes, and spaghetti sauce. So I usually don’t have many extra laying around. Click on the title about each picture to go right to the recipe.

  • Tomatoes are outstanding in their antioxidant content, including, lycopene. which has also been linked to bone health.
  • They are also good heart health.
  • Fresh tomatoes have also been shown to help lower total cholesterol.
