Blackened Salmon

Fish of any type makes for a fast meal. This past Sunday morning before church I knew we had had all the Lasagna we could handle from the day or so before and I had nothing else planned so I thought I needed to make a FAST plan (I mean I had like 10 minutes to prep before we headed out the door).

  • Prep Time : 15 minutes
  • Cook Time : 30 minutes

Instructions

  • So I pulled some salmon out of the freezer, drizzled it with olive oil, then topped with a good layer of Blackened Seasoning then on top add a pad of butter and sliced lemon.  (I then covered and returned to the fridge for when we got home from church)
  • Bake at 375 degrees  for about 20 mins. I served with a side salad, http://recipeswelove1.blogspot.com/2011/03/favorite-broccoli.html, Twice Baked Potatoes also from the freezer and veggie and couscous dish. This meal still took 30 minutes to get on the table which is longer than I like for Sunday lunch but it was better than getting home with no plan, and we had a good meal to enjoy as a family.
