Pumpkin Muffins
A friend made these for dessert the other night and they were delicious. We even had leftovers for breakfast the next morning. I think she originally found the recipe on pinterest.
- Prep Time : 15 minutes
- Cook Time : 30 minutes
Ingredients
- Spice Cake Mix - 1
- Pumpkin Puree - 1 15oz (or 16oz - not sure how can size runs)
- Icing
- Powdered Sugar - 1 cup
- Apple Cider - 2 TBS (start with less and add more to get a consistency you want)
- Pumpkin Spice - 1/2 tsp (some have added up to a teaspoon)
Instructions
- Mix these two with a mixer for 2 minutes on medium. Pour in muffin pans and bake at 350 for about 30 mins. Some people say it takes less time so watch them.
- Drizzle over muffins once they are done. Let set before covering.
