Garlic and Onion Roasted Red Potatoes
Here is a picture of them with favorite broccoli and panko crusted tilapia. You can really make these however you want. The longer you cook the crispier they will be so just check them every so often to get the consistency that you like!
- Prep Time : 15 minutes
- Cook Time : 60 minutes
- Red Potatoes - 3 large
- Yellow Onion - 1
- Garlic - 4 - 5 cloves
- Olive Oil
- Sea Salt
- Preheat oven to 375. Dice red potatoes and onion, put in baking dish, mix them around. Dice the garlic cloves as tiny as you can and sprinkle over the top. I then poured some olive oil over the potatoes, onions and garlic. Sprinkle with sea salt and black pepper.
- Bake for about 45-60 minutes. I had mine in there for about 30 minutes at 375 and then had to turn the oven up for the fish I was making and turned it up to 400 so I kept them in about another 10-15 minutes. I do turn stir the mixture every so often and check to make sure I don't need to add more olive oil.
