Spicy Mahi Mahi with Rice and Beans

This is a super fast pantry meal at my house. I don't like cooking with packaged food but this yellow rice is one think I love and makes for a fast meal. Even if you forget to thaw out your fish it still cooks fast.

Ingredients
- Mahi Mahi Filets - 1 per person
- 1 package saffron yellow rice - prepare per package
- 2 cans black beans
- 1/2 salsa
- Cajun Seasoning - to taste
- Diced Tomato - optional
- Micro Greens of your Choice - optional
- cilantro diced - optonal
Instructions
Cook the yellow rice as the package directs.
Place the black beans and salsa into a pan and simmer for about 10 minutes.
In a warm pan with a little olive oil place your mahi mahi and cover with your cajun seasoning. The more spice you like the more you add.
Cook the Mahi Mahi about 3-5 minutes per side until cooked though.
Then layer the rice, beans and fish. I also top mine with fresh cilantro, micro greens and dice tomatoes.
