Corn is another one of the vegetables that just means summer. This year in our neck of the woods the corn has not done very well due to the heat so it is a real treasure this year. A bag of fresh corn is a bit of work but well wroth it.
This is SO good, I keep meaning to make this but have not gotten around to it this summer. I need to grab a bag a chips so I will be ready to make it with the next batch of corn, (and I need to get a better picture).
I try freeze a LOT of corn, so I can throw it in dishes all year.
This is how my Husband enjoys his corn. In this pictures I am using corn that I froze, fresh works too.
New to me this year is canning corn, and I would like to get lots more canned if I get a good supply of corn.
We filled ours a bit too full with corn.
This is very fresh and we enjoy it as a side dish not just a dip.
